TUNA STUFFED BELL PEPPERS

  • 1 large bell pepper
  • 1 large can tuna packed in water
  • 1/2 medium avocado
  • 2 tbsp Greek yogurt
  • 1 tbsp ground mustard
  • 2 tbsp celery, chopped

 

Method:

  1. Wash and cut your bell pepper length wise in half. Discard stem and seeds leaving a small bowl of a pepper.
  2. In a side bowl, combine drained tuna, celery, sour cream and mustard. Combine until well mixed.
  3. Dish tuna mixture evenly into bell peppers. Garnish with sliced avocado and enjoy.
