TUNA STUFFED BELL PEPPERS
- 1 large bell pepper
- 1 large can tuna packed in water
- 1/2 medium avocado
- 2 tbsp Greek yogurt
- 1 tbsp ground mustard
- 2 tbsp celery, chopped
- Wash and cut your bell pepper length wise in half. Discard stem and seeds leaving a small bowl of a pepper.
- In a side bowl, combine drained tuna, celery, sour cream and mustard. Combine until well mixed.
- Dish tuna mixture evenly into bell peppers. Garnish with sliced avocado and enjoy.
